Ingredients

Scale

Ingredients for Wontons:

  • 1 1/2 pounds of Ground pork
  • 1 med Shallot
  • 1 ½ tsp Ginger
  • ½ cup Chives
  • ¼ cup Cilantro
  • 1tsp Sugar
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 tsp Chicken boullion
  • ¼ cup Water
  • 3 tbsp oyster sauce
  • 2 tbsp Light soy sauce
  • 3 tbsp Chinese cooking wine

Ingredients for Soup:

  • 2 pounds of pork or chicken bones (I used 1 pound of each poultry)
  • 1 large ginger
  • 1 large onion
  • 3 tbsp salt
  • 3 tbsp Chicken bouillon
  • 1 tbsp sugar
  • 2 tbsp Light Soy sauce

Additional ingredients for the soup: (optional)

  • Green Onions
  • Cilantro
  • Mushrooms
  • Bok Choy
  • Egg noodles

Instructions

1.     Place your ground pork, shaoxing wine, water, and   into a bowl . Mix in one direction to form a paste.

2.     Once it forms a paste like consistency, add chives, shallots, and grated ginger. Mix well and then pick up the pork mixture and throw it a couple times to create a springy texture.

3.     Fry a little piece and taste the seasonings to adjust to your liking.

4.     To wrap your wonton, place a teaspoon of filling in the center of your wrapper. Wet two sides of your wrapper with water, then fold over into a triangle to seal. Make sure there isn’t any air in the middle. Then wet the two long corners of your wonton and connect them.

5.     In a pot boil water and add 1 tsp of salt. Cook the dumplings in boiling water for 3-4 minutes or until the dumplings float to the top. Using a strainer, take it out and place in a bowl.

6.     Serve with chili oil and green onions or with my homemade soup broth.
