Ingredients

  • 1 flour tortilla
  • 1 tsp salted butter for tortilla
  • 1 egg
  • 1 tbsp TWENTY2 chili oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper

 

Toppings:

 

  • Refried Beans
  • Pico De Gallo
  • White onions
  • Cilantro
  • Lime
  • Salsa
  • Sour cream
  • TWENTY2 Chili Oil
  • Queso Fresco

 

Tools Used:

 

  • Non stick pan
  • Chopsticks

Instructions

 

 

Step 1: Grab your favorite cheese (cheddar, gouda, or a blend) and shred it finely. I like to use a pre-shredded blend of Chihuahua Mexican-style cheese. Preheat a non-stick skillet over medium heat and sprinkle the shredded cheese in a circular shape, forming a ring. Allow it to melt and sizzle until it turns a beautiful golden-brown color and becomes crispy at the edges.

 

Step 2: Put one tablespoon of our own Twenty2 chili oil (or any chili oil you may have) inside the circle of the cheese ring.

 

Step 3: The Egg-Crack Moment Now comes the most crucial part – the egg. Carefully crack a fresh egg into the center of the cheese ring. The sizzling cheese will work magic, creating a lacy, crispy edge around the egg. Cook the egg to your preferred doneness; this taco will accommodate your taste buds whether you like it runny or set. ( I like to put a lid over the top to provide a better environment for the cook.

 

Step 4: Heat a second skillet and warm up the tortilla until golden-brown and crisp.

 

Step 5: Assembling the Taco The moment has arrived to bring all the components together. Gently transfer the crispy cheese and egg ring onto the waiting flour tortilla. Now, it’s time to unleash your creativity with toppings. I like to add pico de gallo, cilantro, extra onions, salsa, crema, queso fresco, and extra chili oil. Feel free to add what YOU want; it’s YOUR taco!
