  • 1 Box of elbow macaroni
  • 3 cups mayonnaise (heavy duty mayonnaise for a creamier taste)
  • 1 1/2 cup whole milk
  • 1 cup grated carrot and chopped in smaller pieces.
  • 1/4 cup grated yellow onion (about 1/2 an onion)
  • 2 tablespoons apple cider vinegar
  • 1 1/2 tablespoons yellow mustard
  • 1 1/2 tablespoon granulated sugar
  • 1 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 1 1/2 teaspoon paprika
  • 1 tsp seasoned salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tbsp salt for cooking the macaroni

Instructions

  1. Start by boiling a pot of water and adding 1 tbsp of salt. Add the elbow macaroni and cook it according to the package instructions until it’s tender yet slightly firm (al dente). Drain the macaroni but do not mix. This will allow the dressing to stick better to the noodles. Just use a pasta scoop and fluff it for a few minutes.
  1. Shred carrots or grate into small pieces. (I just like more of a bite to my carrots, so I Shredded it.) Grate an onion and set aside.
  2. In a large mixing bowl, add apple cider vinegar while the noodles are still hot to absorb more flavor and give it more of that tang. Let it sit for 5 minutes before adding in your mayo.
  3. Add mayo, mustard, milk, salt, pepper, seasoned salt, garlic powder, onion powder, sugar, and paprika.
  4. Add, carrots, grated onions with the juice, and mix well.
  5. Cover the bowl with plastic wrap or a lid and refrigerate the mac salad for at least an hour best over night. This resting period allows the flavors to mingle, creating a harmonious taste that’s reminiscent of authentic Hawaiian flavors.
  6. Before serving, give the mac salad a gentle stir to ensure all ingredients are well-coated with the creamy dressing. For a traditional touch, you can sprinkle a pinch of paprika on top, adding a pop of color and a hint of smokiness.
