A simple yet satisfying meal to hit the spot in any stomach. Chinese sausage with eggs over rice is always something i have on hand in my household. I makes for a great breakfast, lunch, and dinner. This meal is what I call a fend for yourself meal.
The meal we all knew and loved. Everyone calls this a struggle meal but I didn’t even know it was one until I grew up. I just thought it was easy to make and that’s why we had it. I remember when I first starting cooking in the kitchen, I would try to experiment different methods of cooking them until I found what tastes best for me.
Even though it is a quick and simple meal, these can get burnt if you rush the process. Cooking these on medium-low heat works best for these types of sausages. They hold a lot of sugar so that’s what causes the fast burning. I personally like mine a little burnt, so that’s why they look like that. Don’t come for me, this is my childhood meal. Lap Cheong With Eggs & Rice

Ingredients
- 2 sausages
- Green onions (separate the white and green parts)
- Thai chili peppers
- 2 eggs
- Rice
- Thai dried peppers
- Seasoning sauce
Instructions
- Slowly fry the sausages with no oil for 2-3 minutes on medium-low heat, flipping them half way through.
- Take off the sausages and sauté the white part of green onions and ThTs i chili peppers. Toss back in the sausages and scoot everything to one side.
- Fry 2 sunny side up eggs in the same pot because we don’t like to do extra dishes around here.
- Before I place the ingredients on-top of my rice, I sprinkle Thai dried peppers and seasoning sauce.
- Add everything on the rice, garish with green onions, and add some more seasoning sauce on the eggs.
Notes
- I like seasoning sauce, so you can skip the whole seasoning sauce part if it’s too much for you. It’s more of a personal preference.
